HOLA LOLA _ was a Mexican Pop-up restaurant project created along with my mexican ex-wife Sheily during summer 2013 in Poland. As a Mexican/Polish couple we wanted to bring real mexican flavors and dishes to people in Warsaw.
Among different activities like appearing on selected farmers markets or collaborating with magazines my favorite one was SECRET DINNERS.
The idea behind this was to go out of a typical restaurant environment into something more un- expected. It's a little movement going stronger every day in major mega-cities. People usually use odd apartments, industrial spaces or even out-door locations. Number of guests is limited and they don’t always know each other, so interesting interactions might happen. Booking your dinner, you never know who will be sitting next to you. The menu is set and people can bring their own alcohol.
This creates more intimate dinning experience and guest can really feel that the chef is cooking especially for them.
As HOLA LOLA we were serving 5 courses menu along with a welcoming cocktail. We only asked our guests if there is any special diet or allergies that we have to be aware of. Except for that they didn’t know what might end up on their dinner plates. Response was amazing and I’m sure they had plenty of good time coming to our little culinary events.
